Apple Pecan Pancakes

     Somedays you need an indulgence, today is one of those days, I had a craving for pancakes for breakfast today, don't these look delicious?  These pancakes would also make a great recipe to make for Mother's Day Breakfast, and easy too so the clean-up is easy.  These are easy to make with the basics you already have in your kitchen.  These are also great to have with a berry syrup, or bananas on top, or my favorite, chocolate chips.

     Serve these with an ambrosia salad, or eggs and bacon and you will have a breakfast fit for a queen, treat mom like the queen she is and deserves to be treated like.  This is also great for any weekend that you have company coming to visit.  This weekend I have family coming to visit, and I think this might be the breakfast I make for them.  What do you think? 

Apple Pecan Pancakes


1 cup all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup plus 2 tablespoons milk
2 eggs, separated
1 teaspoon vanilla extract
1/2 cup chopped peeled apple
1/2 cup chopped pecans


In a bowl, combine flour, brown sugar, baking powder, salt and cinnamon. Stir in milk, egg yolks and vanilla. Add apples and pecans. Beat egg whites until stiff peaks form; fold into the batter. Pour batter by 1/4 cupfuls onto a hot greased griddle or skillet. Turn when bubbles begin to form and the edges are golden. Cook until the second side is golden.

My daughter requests pancakes for breakfast, lunch and even dinner. These will fit nicely into our rotation!!!
