Spicy Lemon Catfish

     Catfish has always been a maligned fish.  Everyone calls it ugly, or a bottom feeder, or a garbage fish.  Its bad reputation is legendary, however it teaches you what they always say, "don't judge a book by it's cover."  As well all know catfish is one ugly fish!  Underneath all the scales and whiskers is one delectable fish. 

     Catfish has become one of my absolute favorites, primarily because its usually one of the cheapest at the grocery store.  There are so many different ways to use it too.  It is a an easy fish to cook ad incorporate so many different flavors with.  You can fry it, grill it, bake it. poach it.  Find out what works for you!  This is my favorite though.  Enjoy!


Spicy Lemon Catfish

Ingredients:

4 catfish fillets
¼ cup of fresh lemon juice.
¼ cup of oil.
1 teaspoon of dry minced onion.
½ teaspoon of garlic salt.
1 teaspoon of hot pepper sauce.
4 lemon wedges.
2 teaspoons blackened seasoning
salt and pepper to taste
Directions:

Rinse the catfish fillets and blot dry.

In a 13 by 9 pyrex, combine the lemon juice, oil, onion, blackened seasoning, garlic salt and hot pepper sauce.

Add the fillets to the mixture and marinate overnight in your refrigerator, turning a few times.

Grill the fish fillets over medium-high heat for about 8 minutes on each side or until the fish flakes easily when tested with a fork.
