Perfect Salmon Dinner


     I definitely am trying to eat healthier, so many times I hear that healthy food isn't flavorful food.  That is so not true, this is such a light and healthy, but delicious meal.  I have been reading so many different articles about anti-inflammatory foods, the flat belly diet and omega 3s.  If you are interested in an of that, this recipe is totally for you, it helps with all three issues.  I also love how this recipe doesn't have a strong fishy taste, so if you have people who aren't as fond of fish this will still work for them.  Hopefully this recipe will help me get ready for swimsuit season.  Serve is with string beans and brown rice and it is a great easy weeknight dinner.


Tangy Lime Salmon

Ingredients

3 tablespoons unsalted butter
2 tablespoons lime juice
1 tablespoon honey
Salt and ground black pepper
2 (4-ounce) salmon fillets
Cooked pasta or rice

Directions

In a small saucepan, melt butter and honey, then add lime juice. Salt and pepper the salmon fillets modestly on both sides. Place fillets onto grill, brush half of lime butter over salmon. Grill salmon for 2 to 3 minutes per side for medium-rare. Drizzle remaining lime butter over salmon before serving. Serve with pasta or rice.
