Midnight Munchies- Portobello Sandwich

     Some nights you just get the midnight munchies, sandwiches are one of my favorite midnight munchie snacks, but this sandwich is great for any time as well.  I love that it is also a healthy sandwich as well so I don't have to feel guilty.  A good friend of mine is a vegetarian and this is a sandwich for the carnivores and vegetarians alike, it pleases everyone!  This is a sandwich I actually find myself craving frequently, so good!  Give it a shot!


Portobello Sandwich

Ingredients:

1 small clove garlic, chopped
1 teaspoon lemon juice
2-3 portobello mushroom caps, gills removed
Canola or olive oil cooking spray
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cups arugula, or spinach, stemmed and chopped if large
1 large tomato, sliced
1/2 cup sprouts or micro greens
1/4 cup light sour cream
Preparation

Preheat grill to medium-high.

Mash garlic into a paste on a cutting board with the back of a spoon. Combine with sour cream and lemon juice in a small bowl. Set aside.

Coat mushroom caps with cooking spray and season with salt and pepper. Grill 3 to 4 minutes for mushrooms. When cool enough to handle, slice the mushrooms.

Spread 1 1/2 teaspoons of the garlic sourcream on each piece of bread. Layer the mushrooms, arugula (or spinach) and tomato slices onto 4 slices of bread and top with the remaining bread.
