Meatless Mondays- Portabella Pizzas

     I have never been a huge pizza fan, but I do love portabella pizzas, these are so good.  These are a great dinner on meatless Mondays, or any day you are looking for something lighter that still tastes great and will please the entire family.  There really is no true recipe for them, this is the basic recipe I use, but of course you can switch out the toppings according to your own tastes.  This is also a great recipe to use to get kids involved in the cooking process, and most importantly eating their veggies.

Personal Portabella Pizzas


6 large portabella mushroom tops
olive oil
Salt and freshly ground black pepper
1/2 pint grape tomatoes
1/2 cup basil leaves, shredded or torn
1/2 cup goat cheese
2/3 cup pasta sauce


Preheat broiler.
Dress the mushroom caps with liberal drizzle of extra-virgin olive oil and season with salt and pepper. Broil the portabella mushrooms 5 minutes on each side until tender.

While caps are broiling heat 1 tablespoon extra-virgin olive oil in a skillet over medium high heat, add tomatoes to skillet and cook another few minutes until they burst. Add sauce to skillet and reduce 2 to 3 minutes more. Remove the sausage from heat and fold in basil. Fill mushroom caps and top with cheese, place under broiler to brown 2 to 3 minutes then quarter caps and serve.

Great portobella pizzas - a wonderful idea. I love your frugal concept. It can be a real challenge to any cook to make exciting food on a budget. You are an inspiration.
